Thanksgiving 2017

This year, due to my autoimmune issues, I have been following the paleo autoimmune protocol.   While I missed having rolls, stuffing, and regular mashed potatoes, I truly enoyed the turkey.   We did a 12lb bird, brined, and roasted til perfection.  

The bird was covered with an herb mixture of parsley, thyme, rosemary, and sage-
blended with salt olive oil, and avocado oil. Then we stuffed the bird with aples, onion, lemons, orange and more aromatics.

The drippings had a cider citrus taste, but they made good gravy!

Whats next

Well, I have finally come into the future.  Yes that means I have been gifted a tablet, which is my hope that it encourages me to keep blogging and writing out my reciepe creations,.   A little more to the story is that I have been dealing with autoimmune issues and have been partaking in an specialized diet, called the autoimmune protocol.  Basically eliminating any and all allergens to heal potentially leaky gut.  So far I've been on this diet with a few minor relapses, for 5 weeks.  I have lost over 15 lbs, have more energy, but my cravings can come on like a flash flood.  To any and all who read this blog, there is hope.  And one day when I know what my trigger foods are, I can avoid them and continue my health journey.

Gumbo night

Gumbo night 2017 was a success!

The menu....
Gumbo
White rice
French bread
Green salad with homemade Caesar  dressing
Mild Cajun potato Salad
Green beans with bacon
Fried green tomatoes with sauce
Pickled appetizer tray (beets,  asparagus , okra,  dills)
Fresh tomato and cucumber  tray
Corn bread (brought by friends)
And of course condiments to make the night stand out.
Semi sweet tea (just sweet enough)

Summer 2017

This summer use been one for the books!   We are getting a bumper crop of peas,  carrots,  and super excited for tomatoes,  basil,  and potatoes!

St. Pats's Eve Prep

It's time for some Prep for St. Patrick's Day.  Here in the USA we love our celebrations, and as my Grams used to say, "Everyone is a bit Irish on St. Patrick's Day!"  So that I can be better prepared for my feast weekend, I have three things I need to make tonight.

I'm planning on trying out a new Shamrock Fudge recipe Double Chocolate Creme de Menthe Fudge Shamrocks.  Pictures will have to wait, but I am kinda excited!

Next up is my own  Chocolate Beer Cakes, but in cupcake form and with some Bailey's creamer Frosting (no alcohol in the frosting since these have to go to work).

Last but not least, Irish Cream.  Last year I mentioned that I went on Amazon and bought a few cookbooks.  Out of the three I purchased, "The Farmette Cookbook: by Imen McDonnell is by far my favorite.  You can see her blog here.

I will be attempting to make my first batch of Irish Cream.

Almost St Pats!

The countdown has begun.  What will I make this year?  I have finished my 5k, and I look forward to the next.  Unsure who will show up, but whomever does will be in for a surprise!

New Years goals

Every year I write out some.... goals.  They are not resolutions, just goals.

This year is a bit simple.  Blog more. Take more photographs if my creations.   Keep hope even on dark days, and always try and find the blessing.  Be present.  Live with grace and love without limits (that's an every day kind of thing).  Do more 5k events, and maybe I'll even run a bit!

For Christmas we had a lovely smoked Turkey.  I'll need to write out what and how, then post it.  My in the pan stuffing was almost a disaster, but everything else was pretty much a hit. 

Christmas morning presented with two items that have been on my wish list for 5 years.   I look forward to many new recipes and adventures!
